🥗 Summer Herb Salad with Mango, Watermelon & Feta ☀️
Juicy fruit, crunchy veg, bold herbs, and creamy feta — a sunshine bomb on a plate.
🥗 Ingredients (serves 2)

½ mango, diced

1 cup watermelon, cubed

½ orange pointed pepper, thinly sliced

4 radishes, sliced
-
1 spring onion, chopped
-
2 tbsp crumbled feta cheese
-
1 tsp black quinoa seeds (lightly toasted or raw)

Fresh parsley – small handful, chopped
-
Fresh basil – a few leaves, torn
-
Fresh mint – 4–5 leaves, chopped
-
Chives – finely sliced
🧄 Lemon-Garlic Dressing:

2 tbsp olive oil
-
Juice of ½ lemon

2 garlic cloves, minced
-
Salt & freshly ground black pepper to taste

Make the dressing: Mix olive oil, lemon juice, garlic, salt & pepper in a jar. Shake well.

Build the salad: On a large plate or bowl, arrange mango, watermelon, pepper, and radish.

Add the flavor: Sprinkle over spring onion, feta, herbs, and black quinoa seeds.

Finish: Drizzle with the garlic dressing just before serving. Done!
